Size and number of tubes
The CookRite ATFS-40 has 3 tube burners, the ATFS-50 has 4 and the ATFS-75 has 5. More burners put more heat into the oil, so it recovers faster after a basket of frozen chips goes in. That means crisper food and shorter waits during the rush. Takeaways and fish and chip shops usually choose the larger models; cafes and restaurants with a smaller fried menu often choose the ATFS-40.
Tube fryer design
In a tube fryer, the burners heat tubes that run through the oil, leaving a cool zone below where crumbs and batter settle without burning. That keeps the oil cleaner for longer.
Temperature control
CookRite fryers have thermostatic temperature control up to 240°C. Most frying is done between about 170°C and 190°C; frying too cool makes food greasy, while frying too hot breaks the oil down faster.
Safety and build
CookRite fryers are built in 304 stainless steel and include flame failure protection, an automatic safety valve, standby pilots, nickel-plated frying baskets, a front screw-on drain and heavy-duty rear castors. They are gas approved for use Australia-wide.
Getting the most from your oil
- Filter the oil daily and top it up to the fill line.
- Shake ice and excess water off frozen food before frying.
- Do not salt food over the fryer, as salt breaks oil down.
- Turn the fryer down or off during quiet periods.
Oil filter machines and chip dumps
From Frymax we stock the EOF-25, EOF-42 and EOF-54 electric oil filter machines, which pump used oil through a 300 micron screen and 10 micron filter paper so it lasts longer, and the VX15E chip dump, which keeps fried food hot and draining beside the fryer.
Installation and safety
Gas fryers must be installed by a licensed gas fitter, under an exhaust canopy, and away from open water sources. Keep a fire blanket and the correct class of fire extinguisher for cooking oil fires nearby, and never leave a fryer unattended when it is on.

Which fryer size do I need?
Base it on your busiest hour. If chips and fried food are your main menu, choose a 4 or 5 tube fryer, or two fryers so you can separate seafood from chips.
Natural gas or LPG?
Every CookRite fryer is available in natural gas or LPG. Tell us which when you order.
Which oil filter machine do I need?
Choose one that holds at least as much oil as your largest fryer: the Frymax EOF-25, EOF-42 and EOF-54 suit fryers with up to 25, 42 or 54 litres of oil.
Do you deliver Australia-wide?
Yes. We deliver to every state by tailgate truck. Installation by a licensed gas fitter is required.
