Why use a commercial stick blender
A stick blender goes straight into the pot, so there is no need to ladle hot soup into a blender jug. Commercial models have stronger motors, stainless steel tubes and blades, and parts that come apart for cleaning, so they stand up to daily use in a busy kitchen.
Choosing a stick blender
- Tube length: match the tube to your deepest pot. Short 200 to 250 mm tubes suit small batches; 350 to 650 mm tubes reach the bottom of large stockpots.
- Batch size: manufacturers rate blenders by the volume they can handle, from small batches up to around 290 litres.
- Power and speed: more power copes with thicker mixtures. Variable speed gives more control, and smart speed control adjusts power to the load.
- Accessories: a whisk attachment lets the same motor whip cream and egg whites.
