What hot dog equipment do you need?
A hot dog station is usually built around a roller grill, which cooks the sausages and shows them off on the counter at the same time. Most sites add a bun warmer underneath to keep buns soft and warm, and a guard on top so the food is protected on display. If you'd rather cook in bulk and keep the counter compact, a hot dog steamer cooks and holds sausages and buns in one enclosed cabinet.
- Roller grill: rotating heated rollers cook and hold hot dogs evenly, in full view of customers.
- Bun warmer: a heated drawer that sits under a matching roller grill, so it takes up no extra counter space.
- Bun box: an unheated stainless steel box under the grill for bagged buns.
- Guard: a self-serve guard with doors, or an open canopy sneeze guard, to protect food on display.
- Divider kit: separates flavours, or cooked and uncooked product, on the rollers.
- Hot dog steamer: steams and holds hot dogs and buns in a glass-fronted merchandiser.
Flat or slanted roller grill?
A flat roller grill is the traditional low-profile design and suits a back counter or a busy service line. A slanted grill is taller and tilts the rollers towards the customer, so the hot dogs are easier to see from the front of the counter, which helps with impulse sales at servos, kiosks and cinemas.
How to choose a roller grill
- Capacity: grills in our range hold from 10 to 75 hot dogs. Size the grill for your busiest hour, not your average one.
- Footprint: widths run from 406mm to 902mm. Wide models hold 45 hot dogs on a long, shallow grill, while the deeper 565mm-wide 45 hot dog model suits a short counter.
- Roller finish: chrome rollers are the traditional choice. GripsIt rollers have a non-stick coating that gives a little grip to turn the sausages and makes clean-up quicker.
- Heat control: look for separate front and rear heat zones, so you can cook on one side and hold on the other.
- Power: every roller grill, bun warmer and the steamer in our range runs from a standard 10 amp power point.
- Matching accessories: bun warmers, guards and divider kits are made to fit a particular grill series, so choose them together.

Keeping hot dogs safe and looking good
- Hot food on display should be held at 60°C or hotter. Check product temperature with a probe thermometer.
- Allow time to heat up before service: Nemco quotes a 20 minute pre-heat for its roller grills.
- Use the front and rear zones to cook on one side and hold on the other, and rotate stock so nothing sits too long.
- Keep the water reservoir in a moist heat bun warmer topped up so buns stay soft.
- Empty and clean the grease drip pan and wipe the rollers daily.

Hot dog equipment FAQs
Do I need an exhaust canopy for a roller grill?
Nemco describes its hot dog equipment as needing no canopy or exhaust, which is why roller grills suit shops without a commercial kitchen. Check with your landlord or local council if you're unsure what your site allows.
Chrome or GripsIt rollers?
Both cook the same way. GripsIt is Nemco's non-stick roller coating, which gives a subtle grip to turn the sausages and makes the rollers quicker to clean.
Which bun warmer fits my grill?
Nemco bun warmers are sized to sit under a matching grill: the 8027 bun warmer fits under the 8027 roller grill, and so on. Each bun warmer page lists the grill it suits.
What power do they need?
All the Nemco roller grills, bun warmers and the hot dog steamer we sell plug into a standard 10 amp power point.
Roller grill or steamer?
A roller grill gives the browned, grilled look and puts the cooking on show. A steamer cooks hot dogs in as little as 10 minutes and holds them, plus buns, in an enclosed glass-fronted cabinet on a small footprint.
What warranty applies?
Nemco hot dog equipment comes with a 12 month warranty, supported by Meris Food Equipment, the Australian distributor.
