Why use a hot holding cabinet?

A hot holding cabinet keeps cooked food hot, moist and safe between the kitchen and service. Instead of keeping food on the stove or under heat lamps, you can cook ahead, hold it at a steady temperature and serve it in peak condition, which takes the pressure off service and cuts waste.

Types of hot holding cabinet

  • Benchtop heated cabinets: compact cabinets for a few 1/1 GN trays on the pass or counter.
  • Warming drawers: stackable drawers, each holding a 1/1 GN pan, for holding different items separately.
  • Mobile hot holding trolleys: cabinets on castors that hold and transport food to banquets, wards or service points, in slim line and full-width sizes and with one or two separately controlled compartments.

Choosing a hot holding cabinet

  • Capacity: count the 1/1 GN or 2/1 GN trays you need to hold at once.
  • Heating: static heating suits most holding; ventilated (fan) heating gives faster, more even temperatures in larger cabinets.
  • Humidity vents: adjustable vents let you keep moist foods moist and crispy foods crisp.
  • Mobility and width: slim line trolleys fit through standard doors and narrow corridors.

Hot holding cabinet FAQs

What temperature should hot food be held at?

In Australia, hot food should be kept at 60°C or hotter. Hot holding cabinets are designed to hold food above this temperature until it's served.

Can I cook in a hot holding cabinet?

Holding cabinets are designed to keep cooked food hot, not to cook it. If you want to cook slowly and then hold, choose a cook and hold oven.
