Types of commercial mixers
- Planetary mixers move the beater around the bowl as it spins, so it reaches every part of the mix. They come with a dough hook, flat beater and whisk, making them the all-rounders for cakes, batters, creams, mash and lighter doughs.
- Spiral mixers turn a spiral hook and the bowl at the same time, kneading heavy bread and pizza dough thoroughly without overheating it. They are the usual choice for bakeries and pizzerias.
- Tilting head mixers are heavy-duty dough mixers whose head lifts up and bowl comes out, for fast loading and unloading of large batches.
- Fork mixers knead with a slow-turning fork instead of a spiral hook, working the dough gently for traditional bread and pizza dough.
Choosing a mixer
- Capacity: go by the maximum flour or dough weight, not just the bowl size in litres. Overloading a mixer with stiff dough is the most common cause of breakdowns.
- Dough or general mixing: for mostly bread and pizza dough, choose a spiral mixer. For a mix of cakes, creams and doughs, choose a planetary mixer.
- Power: small and mid-size mixers plug into a 10 or 15 amp outlet. The largest planetary and spiral mixers need three-phase power.
- Safety: look for an interlocked bowl guard that stops the mixer when it is opened.

Mixer FAQs
What size mixer do I need?
Work out your largest single batch of dough or batter and choose a mixer whose maximum flour or dough capacity covers it comfortably. Stiffer, low-water doughs reduce a mixer's real capacity, so allow some headroom.
Do the planetary mixers come with attachments?
Yes. The Yasaki, Tyrone and Hamilton Beach planetary mixers come with a stainless steel bowl, dough hook, flat beater and whisk.
