What a meat bandsaw does

A meat bandsaw uses a continuous toothed blade running over two wheels to cut cleanly through meat, bone and frozen product. Butchers use them to break down carcasses and primals and to cut chops, steaks, T-bones and osso buco; supermarkets, wholesalers and abattoirs use larger models for higher volumes.

Choosing a meat bandsaw

  • Cutting capacity: the height and width of the opening under the blade guide decides the largest piece you can cut.
  • Table size: a larger stainless steel table supports bigger cuts and makes repetitive cutting easier.
  • Blade speed and size: faster blade speeds give cleaner cuts through bone; blade length and width affect how often blades need changing.
  • Safety: look for a brake motor, low voltage switching and an emergency latch-in stop.
  • Hygiene: full 304 stainless steel construction with a smooth finish is easier to clean and stands up to daily wash-down.
  • Power: commercial bandsaws usually run on three phase power.
