Choosing a commercial food dehydrator
- Capacity: choose by tray count and tray size. The Benchstar range comes with 10, 16 or 24 stainless steel trays.
- Temperature control: different foods dry best at different temperatures. A digital controller from +30 to +90°C covers herbs and flowers through to meat and fish.
- Air flow: 360° hot air circulation dries every tray evenly, so you do not have to rotate trays during a batch.
- Timer: a 24 hour timer lets long batches such as jerky run overnight.
- Smoking: if you want smoked jerky or fish as well, a combined smokehouse and dehydrator does both in one cabinet.
Suggested drying temperatures
- Herbs and flowers: +35 to +40°C
- Bread: +40 to +50°C
- Fruit: +55 to +60°C
- Meat and fish: +65 to +70°C

Food dehydrator FAQs
Can I make jerky in a food dehydrator?
Yes. Meat is usually dried at around +65 to +70°C. Follow your local food safety requirements for preparing and drying meat.
Do I need a 15 amp outlet?
Not for most models. The Benchstar dehydrators and the ESH-8DB smokehouse run on a standard 10 amp plug. The large Butcherquip BCA1001 biltong cabinet is the exception and needs a 15 amp outlet.
