Bratt pan or boiling pan?

A tilting bratt pan is a large, flat-bottomed pan that can sear, shallow fry, braise, stew and boil in the same well, then tilt forward to pour the batch out. It is the go-to for kitchens cooking big batches of mince, curries, sauces and stews. A boiling pan (also called a kettle) is a deep well for soups, stocks, pasta sauces and custards. Fagor's boiling pans use indirect heating: the well sits inside a jacket of water, so food is cooked by steam heat rather than direct flame and is far less likely to catch on the bottom.

How to choose

Capacity

Fagor bratt pans come in 90 litre (800 mm wide) and 120 litre (1200 mm wide) sizes. The boiling pans hold 150 litres in an 800 mm wide module.

Gas or electric

Gas models are supplied for natural gas, with LPG versions on request. Electric models run on 415V three-phase power. Choose whichever your kitchen is already set up for.

Tilting and filling

The bratt pans tilt up to vertical so the pan empties completely, with motorised tilting on the IM models. All bratt pans and boiling pans fill with water through an electric valve switched from the front panel, and the boiling pans empty through a 2 inch draw-off valve.

Build and safety

Every unit is part of the Fagor Kore 900 line: 930 mm deep and 850 mm high, so it lines up with Kore 900 cooktops, fryers and chargrills. Bratt pans have a 10 mm thick stainless steel pan base for even heat, a thermostat from 50 to 310°C and a switch that cuts the heat when the pan is raised. All are IPX5 water protected.

Installation

Gas models must be connected by a licensed gas fitter and electric models by a licensed electrician. You will also need a cold (or hot and cold) water supply for the filling valve, a floor drain or trough in front of the unit, and a suitable exhaust canopy.

Bratt pan and boiling pan FAQs

What can I cook in a bratt pan?

Almost anything in volume: browning mince, braising, stewing, shallow frying, poaching and boiling. The flat base and tilting design make it one of the most versatile pieces in a production kitchen.

Why choose indirect heating for a boiling pan?

Because the heat reaches the food through a water jacket, thick soups, sauces and dairy-based recipes are much less likely to scorch or stick.

Can I get them on LPG?

Yes. Gas models are supplied for natural gas and can be ordered for LPG. Please tell us which gas you need when ordering.
