Fagor describes its tilting bratt pans as four machines in one: a fryer for small items, a fry-top for grilling and dry-heat cooking, a boiling pan for wet cooking and a bain-marie for holding. The SB-E915IM is the big electric model in the Kore 900 Series, with a 120 litre stainless steel pan, a 10mm thick base and 22.5 kW of heating. Automatic tilting takes the pan to 90° for complete emptying, and it is 1200mm wide, compared with 800mm for the 90 litre SB-E910IM.

Good to know before you buy:

• Power: 22.5 kW on 415V three-phase, connected by a licensed electrician. Check your switchboard has the capacity. We supply the equipment only.
• Water: the fill valve needs a water connection at the back, which a licensed plumber should connect.
• Access: it weighs 233 kg and the packed unit is about 1240mm long, so plan the route from the kerb to the kitchen. Delivery is by tailgate truck to the front of your premises.

How far does the pan tilt?
