What is a regeneration oven?

A regeneration (or rethermalisation) oven brings pre-cooked, chilled meals back up to serving temperature evenly and safely, either plated or in gastronorm trays. It's the final step in a cook-chill system: food is cooked, rapidly chilled in a blast chiller, stored, then regenerated just before service.

Who uses regeneration ovens?

Hospitals, aged care homes, schools, prisons, airlines and large caterers use regeneration ovens to serve hundreds of meals at the right temperature with consistent quality, while cooking centrally and ahead of time.

Types of regeneration oven

  • Static regeneration ovens: fixed ovens in 1/1 GN and 2/1 GN sizes, with a direct water connection for humidity.
  • Mobile regeneration ovens: ovens on castors with a built-in water tank, so meals can be regenerated at the ward or service point.
  • Roll-in (wheel-in) regeneration ovens: large ovens that take a full trolley of trays or plates, including pass-through models that load on one side and unload on the other.

Choosing a regeneration oven

  • Capacity: count trays or plates per batch.
  • Humidity: humidity during regeneration keeps food moist and stops it drying out.
  • Controls and records: programmable settings and USB HACCP logging make regeneration repeatable and traceable.
  • Power: most regeneration ovens need a three phase supply.

Regeneration oven FAQs

Can I regenerate plated meals?

Yes. Regeneration ovens are designed for both plated meals and gastronorm trays; plate capacity depends on the model and plate size.

Do regeneration ovens need a water connection?

Static models connect directly to the water supply. Mobile models have a built-in water storage tank so they can be used wherever there's power.
