Bakery Freezers

Bakery freezers, also called bakers freezers or tray freezers, are upright commercial freezers with tray slides instead of shelves, so whole trays of frozen dough, pastry and par-baked goods slide straight in and out. Models suit Australian bakers trays, 600 x 400mm or 600 x 800mm trays, and every one can run at -18°C or colder. All are priced under RRP with Australia-wide delivery. Need to chill or retard dough as well? See our matching Bakery Fridges.

What is a bakery freezer?

A bakery freezer is an upright commercial freezer built around bakers trays. Pairs of tray slides down each side hold full trays, so frozen dough, croissants, cookie dough, pastry and par-baked bread go from the bench into the freezer, and later towards the oven, without being repacked. It saves handling time, protects delicate products and makes it easy to bake to demand.

Bakery freezer vs a standard upright freezer

A standard upright freezer has shelves for boxes, bags and containers. A bakery freezer swaps the shelves for tray slides and a deeper cabinet, so trays of product freeze flat, stay separate and come out ready to use. If most of what you freeze is boxed stock, a standard upright freezer is the better buy.

How to choose a bakery freezer

1. Match your trays

The slides suit particular trays, so start with the ones you already use:

  • Australian bakers trays, 16 or 18 inches wide and 30 inches long
  • 600 x 400mm trays, the European patisserie size that many bakery ovens also take
  • 600 x 800mm trays, twice the area of a 600 x 400mm tray

Some models take more than one size. The range list below shows which trays each one suits. Trays aren't included with any model.

2. Count usable tray levels

Our bakery freezers hold from 10 to 40 trays. Work out how many trays you freeze in your biggest batch, then allow extra levels if you'll leave gaps for taller products.

3. Temperature

-18°C or colder is the usual target for keeping dough and baked goods hard frozen, and every model here can hold it. The Bakers Mate freezers are set at -18°C. The FED-X holds -22°C to -18°C, and the Williams models -13°C to -21°C, so set those to -18°C or below. All of them are rated for rooms of 40°C, and the FED-X to 43°C, which matters in a hot bakery.

4. Measure the space and the way in

Single door models are 700 to 740mm wide and double door models 1220 to 1466mm wide, with depths from 824 to 990mm and heights from 1974 to 2128mm. Check doorways, corridors and ceiling height on the route in. Delivery is by tailgate truck to your door.

5. Power

Every model plugs into a standard 10 amp power point. A freezer draws more than the matching fridge, so give it a circuit that isn't shared with ovens or mixers where you can. We supply the equipment only.

Bakery freezer FAQs

Do you sell Bakers Buddy cabinets?

No. Bakers Buddy is the name another Australian supplier uses for its own range of bakery cabinets, and we don't stock that range. If you need a bakery freezer, the models on this page are upright freezers with tray slides instead of shelves that can hold -18°C or colder. Check which trays you use and how many tray levels you need, then compare the models above. For chilled storage or dough retarding, see our Bakery Fridges.

How much does a bakery freezer cost to run?

It depends on the cabinet, how often the doors open and how hot the room is. As a guide, the FED-X XPA800BT is rated at 7.32 kWh per 24 hours, which at 35c per kWh is about $2.56 a day, or roughly $935 a year. Real use varies with door openings and room temperature. To estimate any model at your own power price, use our running cost calculator.

Can I freeze cooked food in a bakery freezer?

Yes, once it has cooled. Putting hot food in a freezer warms everything around it, so bring it down quickly first with a blast chiller.

Can I freeze shaped dough and bake it later?

Yes. Many bakeries freeze shaped dough or par-baked product in batches on trays, then move trays to a bakery fridge or retarder to thaw before baking. Follow the recipe for each product, as thawing and proving times vary.
