What is a meat ageing cabinet?
A meat ageing cabinet (also called a seasoning or maturation cabinet) is a refrigerated cabinet that controls temperature, humidity and air flow so meat can mature or cure safely. Butchers, steakhouses, delis and restaurants use them to dry age beef and season cured meats such as salami and prosciutto in-house, and the glass door puts the product on show for customers.
How to choose
Curing or dry ageing
The Polaris LS82V is set up for seasoning cured meats, and the LF82V for maturing (dry ageing) fresh meat. Both run from -5°C to +30°C with automatic relative humidity control and a built-in steam generator, so you can hold the conditions each product needs.
Capacity and size
Both cabinets hold 607 litres in a 790 mm wide footprint (790 x 1030 x 2110 mm high) and come with 4 stainless steel grids and 4 meat hangers.
Power and build
They run on 240V single-phase power (1.634 kW) and use natural R290 refrigerant, with 60 mm insulation, touch controls, forced air circulation and automatic defrost. Polaris cabinets are made in Italy.

Meat ageing cabinet FAQs
Can I dry age beef in a normal fridge?
Not reliably. Dry ageing needs a steady temperature, controlled humidity and constant air movement. A standard fridge controls temperature only, while an ageing cabinet manages all three.
What is the difference between the LS82V and LF82V?
They share the same cabinet, size and controls. The LS82V is set up for seasoning cured meats like salami, and the LF82V for maturing fresh cuts such as dry aged beef.
