Everlasting FAQs

Why use a blast chiller instead of a fridge?

A blast chiller brings cooked food from 90°C down to 3°C fast, moving it quickly through the temperature range where bacteria grow, and a shock freezer takes it on to -18°C. A normal fridge or freezer isn't built to remove that much heat at once, and putting hot food in one warms everything else inside.

Which Meatico cabinet should I choose?

For dry ageing beef and other meat, choose a dry age meat cabinet (DAE0701 or DAE1501), or a Panorama model (DAE0702 or DAE1502) if you want the meat on show from both sides. To cure salami and season cheese as well, choose an all-in-one cabinet (DAE0700 or DAE1500), which runs from 0°C to 30°C with a built-in humidifier.

Do they need a water connection?

The all-in-one Meatico cabinets and the retarder proofers need a water supply connected by a licensed plumber. The dry age meat cabinets, blast chillers and gelato freezer do not.

What power do they need?

Most models run on single-phase 240V power. The BCE2015, BCE2020 and BCE9320 blast chillers and the RPE6600 proofer room need 400V three-phase power, connected by a licensed electrician. The BCE9320 and RPE6600 have remote condensing units, and installation is not included.

What warranty applies?

The blast chillers have 2 years parts and 1 year labour (ICE Extended Gold Star warranty). The Meatico cabinets, retarder proofers and gelato freezer have a 12 month warranty.
