The Everlasting RPE2790 is a glass door retarder proofer, made in Italy, that controls dough fermentation through temperature, humidity and time, from -10°C to 40°C. It comes set up for 406 x 720mm (16 x 29 inch) trays, one per level, and converts without tools to take two 600 x 400mm baking trays per level. It uses natural R290 refrigerant.
