How a pass through dishwasher works
A pass through dishwasher sits between a dirty dish inlet bench and a clean dish outlet bench. Staff scrape and rinse dishes on the inlet side, slide a full rack in, lower the hood and the machine runs automatically. When the cycle ends, they lift the hood and push the rack out onto the outlet bench to dry. It is fast, ergonomic and keeps dirty and clean dishes separate.
How to choose an upright dishwasher
Throughput
The Fagor CO-142BDD washes up to 65 baskets an hour (around 1,170 dishes) with 55, 75 and 120 second cycles. The Norris AP750 and AP2500 wash up to 1,080 plates an hour. The Asber GE-H500DD handles up to 40 baskets an hour and has a continuous cycle. Size the machine to your busiest service.
Hood clearance
Check the tallest items you wash, like trays, GN pans and stock pots. The Fagor CO-142 models have a 440mm opening suitable for GN 1/1 trays, and the Norris AP2500 has a 470mm washable opening for larger items.
Heat recovery and condensers
Every time the hood lifts, a cloud of hot steam comes out. Heat recovery and condenser models, like the Fagor CO-142HRSBDD and Madison IM20 with condenser, capture that steam and reuse its heat, making the dish area more comfortable and cutting energy use.
Controls
The Madison IM20 is available with a top control panel, which is easy to see and reach when the machine sits in a corner or between benches.
Power and plumbing
Upright dishwashers draw more power than underbench models, and many need a 3-phase supply. Check the electrical requirements on each product page, and plan the water, drain and power connections before installation.
