Commercial Speed Ovens

Commercial speed ovens combine hot air impingement, convection and microwave energy to toast, grill, bake and reheat food in a fraction of the time of a standard oven. They suit cafes, bars, convenience stores and quick service venues that need fast, consistent results from a compact benchtop unit. You'll also find a steam cooker here that makes scrambled eggs, porridge and soup to order.

How a speed oven works

A commercial speed oven (also called a high speed or rapid cook oven) combines three kinds of heat in one cavity. Jets of hot air (impingement) brown and crisp the outside, convection cooks evenly, and microwave energy heats the inside quickly. Together they toast, grill, bake and reheat food in a fraction of the time a standard oven takes, with results that are crisp rather than soggy.

Who uses a speed oven?

Speed ovens suit cafes, bars, pubs, convenience stores, kiosks and quick service venues that need hot food fast from a small benchtop footprint: toasted sandwiches, pizzas, pastries, wraps, wings and reheated meals. Programmed recipes mean any staff member can get the same result every time with one touch.

Choosing a speed oven

  • Cavity size: a compact 17 to 18 litre chamber suits single portions and sandwiches, while a larger 36 litre chamber takes bigger items such as full pizzas or several portions at once.
  • Power supply: smaller models usually run on single phase 15 amp power; larger models need a three phase supply.
  • Controls: touch screen controls with stored recipes make training easy and keep results consistent.
  • Cleaning: look for removable, washable chamber linings and rapid cool-down for faster end-of-day cleaning.

Speed oven FAQs

Is a speed oven just a microwave?

No. A speed oven uses microwave energy together with hot air impingement, convection or radiant heating elements, so food browns and crisps instead of going soft.

What power supply do I need?

The Lainox Oracle 17.3 litre and 17.9 litre models and the ExtremePro NP-ProSiT and NP-SiTngs run on single phase 15 amp power, and the compact ExtremePro NP-MWO-T runs on single phase 240V. The 36.4 litre Oracle XL and the ExtremePro NP-ProBTD need a three phase supply installed by a licensed electrician.
