What is a bakery fridge?

A bakery fridge is a commercial upright fridge designed around bakers trays. Instead of wire shelves, the cabinet has pairs of runners down each side, so full trays slide in just like a rack trolley. Trays go from the bench to the fridge to the oven without anything being handled twice, which saves time and space and protects delicate products like croissant dough, laminated pastry and decorated cakes.

Bakery fridge vs a standard upright fridge

A standard commercial upright fridge uses gastronorm (GN 2/1) shelves sized for pans and containers. Bakers trays are a different shape, so they either won't fit or sit on a shelf with wasted space above them. A bakery fridge:

  • holds trays on runners at close spacing, so you fit far more product in the same floor space
  • uses fan-forced cooling to move cold air evenly around every tray, so the top and bottom trays chill the same
  • is deeper than most upright fridges to suit full-length bakers trays

If you mostly store tubs, pans and containers, a regular upright fridge may suit you better.

How to choose the right bakery fridge

1. Match your tray size

Most Australian bakeries use 16-inch or 18-inch bakers trays, while European-style patisseries often use 600 x 400mm trays. Check the runners suit the trays you already own before you buy. Our Bakers Mate bakery fridges take both 16" and 18" bakers trays and wires.

2. Work out how many trays you need

Count the trays you need chilled at your busiest time (overnight dough, fillings and finished stock) and allow some room to grow. A single door model like the Bakers Mate BMC1 has 16 pairs of runners, and the double door BMC2 has 32.

3. Check the temperature

Bakery fridges typically run at around +2°C. Australian food safety rules require chilled food to be kept at 5°C or below, so a fridge that recovers quickly after the door is opened keeps your whole load safe through a busy morning.

4. Look at build quality and servicing

Choose 304-grade stainless steel inside and out. It resists corrosion from flour, sugar and moisture and is easy to sanitise. A removable monoblock refrigeration unit, like the one on the Bakers Mate range, lifts out for cleaning or service, so a repair doesn't take over your kitchen.

5. Measure your space and access

Allow for the cabinet footprint plus room for the doors to open fully. The Bakers Mate BMC1 is 700mm wide and the BMC2 is 1220mm wide, both 940mm deep and 1980mm high, and both plug into a standard 10 amp power point. Measure your doorways and corridors too, as delivery is by tailgate truck to your door.

What's the difference between a bakers fridge and a normal commercial fridge?

A bakers fridge has tray runners instead of shelves and a deeper cabinet, so full bakers trays slide straight in. A normal upright fridge is set up for gastronorm pans and containers.

What size trays fit in your bakery fridges?

The Bakers Mate BMC1 and BMC2 take both 16-inch and 18-inch bakers trays and wires (trays not included). If you use 600 x 400mm trays, contact us and we'll confirm the best fit.

What temperature does a bakery fridge run at?

The Bakers Mate range is set at +2°C, comfortably under the 5°C limit for chilled food.

How many trays does a bakery fridge hold?

Our single door models have 16 pairs of runners, so they hold up to 16 trays. Double door models have 32.

Do you sell matching bakery freezers?

Can a bakery fridge be used as a dough retarder?

A bakery fridge will hold dough at a steady +2°C overnight to slow proving, but it doesn't control humidity or switch over to proving automatically. For that you need a dedicated retarder prover.
