If your bakery runs on 16 inch or 18 inch trays rather than 600 x 400 Euro trays, the Williams Crystal RC1TSS is the retarder built for them. Its single solid stainless steel door opens onto 730 litres and twenty pairs of tray slides at 75mm spacing, and you choose the slide size (18" x 30", 16" x 30" or 600mm x 400mm) when you order. It holds dough at -5°C to +3°C to slow proving, is made in Australia for 40°C bakeries, and plugs into a 10 amp outlet with no drain to run. The LC1TSS is the freezer version, and the RC2TSS has two doors.

Which trays does it take?
Williams supplies it with 20 pairs of slides per door for 18" x 30" trays, 16" x 30" trays or 600mm x 400mm trays. You choose the size at the time of order. Trays themselves are not included.
What is the difference between Crystal and Garnet Bakery?
Crystal is the larger cabinet (730 litres, 922mm deep) with 20 pairs of slides and a choice of imperial or metric tray sizes. Garnet Bakery is a slimmer 610 litre cabinet with 10 pairs of slides for 600mm x 400mm trays only.
Do you install it?
No. It rolls into place, plugs into a 10 amp outlet and needs no drain. We supply the equipment only.
