About Moduline
Moduline is an Italian manufacturer based in Vittorio Veneto, in the province of Treviso, with more than 30 years of experience working stainless steel. It specialises in equipment that cooks, holds and regenerates food: low temperature cook and hold ovens and smokers, hot holding cabinets and trolleys, and Retherma regeneration ovens. Moduline equipment is sold in more than 40 countries.
Moduline is built for kitchens that cook ahead. Food is cooked or chilled in advance, then held hot or brought back to serving temperature without drying out, which suits hospitals, aged care, catering, banqueting and busy restaurants.

Moduline FAQs
What is a cook and hold oven?
A cook and hold oven cooks food slowly at a low temperature, often overnight, then holds it at serving temperature until you need it. Moduline cook and hold ovens use gentle static heat with a core probe, so large cuts of meat cook evenly and stay moist.
What is the difference between a hot holding cabinet and a regeneration oven?
A hot holding cabinet keeps food that is already cooked and hot at serving temperature, between 30°C and 120°C on most Moduline models. A regeneration oven reheats chilled, pre-cooked meals back to serving temperature, using ventilated heat and humidity so the food doesn't dry out.
What power supply do Moduline products need?
Moduline cook and hold ovens, smokers, hot holding cabinets, warming drawers and the infrared salamander run on 240V single phase power. Regeneration ovens and the Flexy Grill salamander need a three phase supply, and static regeneration ovens also need a water connection.
