Types of commercial pizza ovens
- Countertop pizza ovens are compact single or double deck ovens with a stone hearth. They suit cafes, bars and takeaways adding pizza to the menu, and many run on a standard 10 or 15 amp plug.
- Electric deck ovens bake pizzas directly on a stone sole for a crisp base, with separate top and bottom heat. Single and double deck models suit pizzerias and restaurants, and many also take 600 x 400 mm bakery trays.
- Gas deck ovens bake on a stone sole using natural gas, a good choice where three-phase power isn't available.
- Conveyor pizza ovens carry pizzas through the oven on a moving belt, so every pizza bakes for the same time at the same temperature. They suit busy takeaways, food courts and venues where staff change often.
Choosing a pizza oven
- Capacity: work out how many pizzas you need in your busiest hour. Deck ovens are rated by pizzas per deck (for example 4 x 30 cm or 6 x 35 cm), conveyor ovens by pizzas per hour.
- Temperature: thin-crust pizza bakes best at high heat. Stone deck ovens reaching 450 to 500°C give a fast bake and a crisp base.
- Power supply: countertop ovens plug into 10 or 15 amp outlets, while most deck and conveyor ovens need a three-phase supply connected by a licensed electrician. Gas ovens must be installed by a licensed gas fitter.
- Ventilation: check your local requirements for exhaust hoods. Some conveyor ovens have a built-in catalytic filter designed to run without a hood.

Pizza oven FAQs
Do I need three-phase power for a pizza oven?
Not always. The EP-1T and EP-2T countertop ovens plug into a standard 10 amp outlet, and the EP-2T/15 and HX-14EP use a 15 amp outlet. The Prismafood PMG-9 runs on natural gas. Larger electric deck and conveyor ovens need three-phase power.
Can I bake bread in a pizza deck oven?
Yes. Many deck ovens take 600 x 400 mm bakery trays, and the ME2ST models add steam for bread and pastry.
