Why a commercial hot plate?
A hot plate gives you a large, flat cooking surface that heats evenly and holds its temperature as cold food goes on. It is the fastest way to cook breakfast, burgers and short-order meals in volume, and it is easy to clean at the end of service.
How to choose a hot plate
Width
CookRite hot plates come in 300mm, 600mm, 900mm and 1200mm widths in the 800mm deep AT80 series, plus a compact 400mm wide AT65G4G-C in the 650mm deep AT65 series. A 600mm plate suits a cafe breakfast menu; 900mm and 1200mm plates suit burger bars and busy brunch kitchens.
Plate thickness
CookRite hot plates have a 16mm thick plate. A thick plate stores more heat, so the temperature drops less when you load it with cold food, and heat spreads more evenly across the surface.
Heat zones
Wider hot plates have several burners with independent controls, so you can run one side hot for searing and the other cooler for eggs or holding.
Countertop or freestanding?
CookRite countertop models (ending in -C) sit on a bench, stand or refrigerated chef base. CookRite freestanding models (ending in -F) come on their own base, ready to stand on the floor.
Safety and cleaning
CookRite hot plates have flame failure protection, piezo ignition, standby pilots and a removable drip tray, and are built from 304 stainless steel with 2 years parts and labour, plus an extra 2 years on parts when you register the unit online.
Hot plate vs char grill
A hot plate cooks on a flat steel surface, ideal for eggs, pancakes, smash burgers and anything small or delicate. A char grill cooks over open grates for flame-grilled flavour and char marks on steaks, chicken and vegetables. Many kitchens run both side by side.
Installation and care
Gas hot plates must be installed by a licensed gas fitter, and most commercial cooking lines need an exhaust canopy. Season the plate before first use, scrape it down during service and clean it at the end of the day while it is still warm. Empty the drip tray regularly.
Anvil electric griddles
We also stock Anvil 400mm and 600mm benchtop electric flat top griddles with a 10mm thick plate.
