The Atosa ESL3831 is a compact pizza saladette for small pizzerias, cafes and bars that make pizzas or flatbreads in a tight space. It pairs a heavy-duty marble prep area with a chilled rail for 5 x 1/6 GN pans, and keeps 300 litres of two-door storage underneath, all within 900mm. It holds +2°C to +8°C and is rated for kitchens up to 43°C. The ESL3832 is the same size without the marble, while the ESL3864 and ESL3852 are the larger three-door marble-top models.

Good to know before you buy:

• Access: with the marble top it weighs 96 kg (125 kg packed) and stands 1260mm high in its packaging. It is delivered by tailgate truck to the front of your premises, so check doorways and have help ready to move it inside.
• Pans: GN pans and lids are not included. You need 5 x 1/6 pans, 100mm deep.
• Airflow: it can sit against a wall, but keep the front grille clear so the fridge can breathe in a hot pizza kitchen.
• Defrosting: it uses manual defrost, and Atosa recommends defrosting regularly.
