Spidocook SPE-SCH030 - Caldolux Slow Cook and Hold Oven, 3 x GN 1/1, Core Probe

The Caldolux SPE-SCH030 is a compact benchtop oven that slow cooks at up to 120°C, then holds food at up to 100°C until you serve it. It cooks with little to no air movement, so roast meats come out soft and tender with little weight loss, and it suits curries, vegetables and pasta dishes too. A core temperature probe tells the oven when cooking is done and switches it to hold automatically. It takes 3 x GN 1/1 trays, runs on a standard 10 amp plug at 0.76kW, and is stackable with carry handles, which makes it a good fit for cafes, restaurants, caterers, convenience stores and venues.

Key features:

  • Slow cooking up to 120°C and hot holding up to 100°C
  • Core temperature probe ends the cook and switches to holding at your set temperature
  • Digital control panel: set the chamber temperature and when cooking ends
  • Gentle, even heat with little to no air movement for tender meat and maximum yield
  • Holding phase lets food mature naturally, locking in moisture and flavour
  • Adjustable exhaust slots at the front, plus always-open slots at the bottom, let excess humidity out
  • Lightweight and stackable, with easy carry handles
  • Runs at a lower temperature than typical ovens, so it uses less energy
  • Made in Italy

Common questions:

What temperature does it hold food at?
You set the holding temperature, up to 100°C. As a general food safety rule in Australia, hot food should be held at 60°C or hotter.

How does the core probe work?
The probe goes into the food. When it detects that cooking has finished, the oven switches itself to the holding phase at your set temperature, so staff don't need to watch the clock.

Can I stack two units?
Yes. Spidocook describes the Caldolux as stackable, which saves bench space if you need more capacity. Ask us to confirm the stacking details before you order a second unit.
