The biggest dual-sided TSSU, the True TSSU-72-30M-B-DS-ST-HC carries 30 x 1/6 GN pans with a cutting board along each side, so staff can prep from both sides of the one unit, whether it stands in a high-volume kitchen or as an island station. Three solid doors open onto 538 litres gross and six adjustable shelves, and the pans are held at 0.5°C to 5°C. It has stainless steel lids rather than a hood, giving a low 956 mm height, but at 1064 mm it is deeper than the 867 mm single-sided TSSU-72-30M-B-ST-HC.
