How to choose a commercial stove
Number of burners
The CookRite AT80G4B-O has 4 burners, the AT80G6B-O has 6 and the AT80G8B-O has 8. The Fagor Kore 700 series comes as a 4 burner (C-G741H) or 6 burner (C-G761H) range. Count the pans you run at your busiest time and allow one extra burner.
The oven
CookRite ranges have a gas oven with temperature control from 100°C to 300°C and an oven pilot with 100% safety shut-off. For high-volume baking or roasting, consider adding a dedicated combi oven or convection oven.
Build and safety
CookRite ranges are built in 304 stainless steel front, back and sides with heavy cast iron trivets, a tall splashback with high shelf, standard flame failure and heavy-duty rear castors for cleaning. The Fagor Kore 700 ranges have 1.5mm deep-drawn AISI-304 stainless steel tops and enamelled cast iron double grates with a narrow gap for small pans.
Natural gas or LPG

Installation and care
Commercial gas ranges must be installed by a licensed gas fitter, and most commercial cooking lines need an exhaust canopy. Use the rear castors to roll the range out for cleaning behind it, keep burner ports clear and clean the oven regularly.
