Types of food prep fridge

Sandwich and salad prep tables

A sandwich or salad prep fridge has a refrigerated pan rail on top, a cutting board in front and fridge storage underneath. Staff build each order from chilled ingredients without walking to the cool room, and restock the pans from the cabinet below. The Atosa MSF range comes in 1, 2 and 3 door sizes, with glass top versions (MSF8302G, MSF8303G and MSF8304G) that let you see the ingredients with the lid closed.

Mega top prep fridges

Mega top models hold an extra row of pans for kitchens with a big menu of toppings, like noodle bars, burrito bars and sandwich shops. The Atosa MSF8305 to MSF8308 mega top noodle bar prep fridges run from 698mm to 1846mm wide.

Pizza prep tables

Pizza prep tables have a deeper work surface for stretching and topping bases, a refrigerated topping rail, and storage below. The Atosa MPF range comes in 1, 2 and 3 door sizes, and the Atosa EPF pizza tables include models with drawers that take 600 x 400mm dough trays. The Atosa ESL3831 saladette has a marble top for working dough.

Saladettes with lids

Saladettes are compact prep fridges with a lid over the pans. Atosa ESL saladettes come with a sliding lid, flat table top or open top. The Skipio SHR salad prep tables have a hood lid and range from 293 to 702 litres, and the Skipio SSR salad prep tables range from 233 to 568 litres.

Countertop salad bars

If you already have bench space, a countertop salad bar adds a refrigerated pan rail with a glass sneeze guard on top of any counter. The Atosa ESL3861 to ESL3890 range takes 1/3 or 1/4 GN pans, 100mm deep, in sizes from 4 to 10 pans.

How to choose a prep fridge

Count your ingredients

List every topping and ingredient you need on the line at once, then choose a model with enough pan spaces. Smaller pans (1/6 or 1/9 GN) fit more ingredients; larger pans (1/3 GN) hold more of your fastest-moving items.

Width and storage below

Measure the bench run and decide how much storage you need underneath. Our prep fridges run from compact single door saladettes to 3 door models over 1800mm wide.

Temperature and food safety

Toppings must be kept at 5°C or below. Many of our prep fridges run from -2°C to 8°C, and many of the Atosa models are rated for 43°C ambient so they keep working on a hot line. Close the lid when the line is quiet to keep the pans cold, and do not overfill pans above the cold zone.

Fan or static cooling

Fan-forced cooling, like on the Skipio SHR and SSR models, recovers quickly after the doors are opened. Static cooling, used on many saladettes and countertop salad bars, is gentle and stops delicate ingredients drying out.

Overshelves

Add an Atosa MROS double tier overshelf above your prep fridge to keep sauces, containers and tickets within reach. Each one is made to suit specific MSF and MPF models.

Installation and care

Leave the ventilation clearance shown in the manual; the Atosa EPF pizza tables, for example, need 100mm. Wipe out the pan rail and cutting board at the end of every shift, clean the condenser regularly, and check the lid and door seals.

Prep fridge FAQs

What is the difference between a sandwich prep fridge and a pizza prep fridge?

A pizza prep fridge has a deeper work surface for stretching and topping bases, while a sandwich or salad prep fridge has a narrower cutting board and a pan rail sized for sandwich ingredients.

Do prep fridges come with the pans?

It depends on the model, so check each product page. Pans are standard gastronorm sizes, so you can choose the depths and sizes that suit your menu.

What temperature should a salad prep fridge be?

Ingredients must stay at 5°C or below. Keep the lid closed when the line is quiet, and only fill pans to the level the cold air reaches.

Do you deliver Australia-wide?

Yes. We deliver to every state by tailgate truck. Standard delivery is to your door.
