Commercial Convection Ovens

Commercial convection ovens use a fan to drive hot air evenly around the food, so pastries, bread, pies and roasts cook faster and more evenly than in a standard oven. Choose from compact 3-tray countertop models up to larger ovens taking gastronorm or 600 x 400mm bakery trays, including bakery ovens that draw off humidity so fresh and frozen pastry bakes crisp. Every model is priced below RRP with Australia-wide delivery.

Why choose a countertop convection oven?

A countertop convection oven gives a cafe, bakery or takeaway serious baking and reheating capacity without a full kitchen fit-out. The fan circulates hot air so every tray cooks evenly, you can bake on several shelves at once, and food cooks faster at lower temperatures than in a conventional oven.

Choose the right size

  • Atosa CTCO-25: compact oven for 3 x GN1/4 pans. Ideal for heating pastries and small batches at the counter.
  • Atosa CTCO-50: takes 4 x GN1/2 pans. A versatile choice for cafes and small kitchens.
  • Atosa CTCO-100: takes 4 x 600 x 400mm bakery trays on 4 shelves with 47mm spacing. Built for bakeries and cafes baking muffins, croissants and cookies in volume.

Features to look for

  • Temperature range: the CTCO-100 runs from 38°C to 260°C with a 120 minute timer.
  • Even airflow: an advanced airflow design bakes evenly from front to back and shelf to shelf.
  • Cool-touch door: double pane tempered glass keeps the outside cooler and lets you check food without opening the door.
  • Easy cleaning: heavy-duty stainless steel inside and out, with removable rack holders.

Convection oven vs combi oven

A convection oven bakes and roasts with fan-forced dry heat. A combi oven adds steam and humidity control, so it can also steam, slow cook and roast with less shrinkage. For baking and reheating, a convection oven is simpler and more affordable; for a full menu in volume, a combi oven is more versatile.

Installation and care

Leave clear space around the oven for ventilation, check the power requirements on the product page, and keep it on a stable, heat-resistant surface. Wipe the interior daily and keep the fan cover clear of grease and crumbs.

Anvil convection ovens

We also stock Anvil benchtop convection ovens: the compact COA1001, the 10 amp Prima and Prima Pro, and the Grande Forni with steam injection, which takes 600 x 400mm trays.

Convection oven FAQs

Do I need to adjust recipes for a convection oven?

Usually yes. Because the fan moves heat more efficiently, many recipes need a slightly lower temperature or a shorter time than in a conventional oven. Test a batch and adjust.

What trays fit the CTCO-100?

It takes 4 standard 600 x 400mm bakery trays, which are the same trays used by most bakery fridges, freezers and blast chillers.

Do you deliver Australia-wide?

Yes. We deliver to every state by tailgate truck. Standard delivery is to your door.
