The Fagor CW-202ERSWS is a 20 tray GN 2/1 electric combi oven from the iKore Concept range, generating steam with direct steam injection. It steams, roasts, bakes and combines both from low-temperature steam up to 300°C, with iClima humidity control, a multi-point core probe and an automatic washing system to finish the day.

• iWashing solid wash – iWashing System for easy solid automatic cleaning
• Fagor Recipe Center – 2.8" screen with rotary knob and push function for configuring and confirming inputs. Fagor Recipe Center: 100 factory preset and culinary-tested recipes
• Cooking modes – Low-temperature steam +30 to +98°C, steam +99°C, super steam +100 to +130°C, mixed +30 to +300°C and convection +30 to +300°C. Delta cooking and 10% regulation capacity
• iClima humidity control – Humidity management and control by means of direct measurement with a humidity sensor. Chamber dehumidification for crispy roasts
• EZ-Sensor probe – Multi-point internal probe for accurate temperature monitoring. Possibility of working with one internal probe or an external probe
• HACCP – HACCP record system and HACCP compliance to ensure food safety
• Rapid cool-down – Air and water cool-down (rapid cabinet cooling function) by an efficient air and water system
• Triple-glazed door – Triple-glazed door ensures heat retention and safety
