The Polaris Genius Logical GL05 is a 5 tray blast chiller that also heats, so one compact cabinet can chill, freeze, thaw, prove, hold and cook at low temperature. It blast chills 30 kg or shock freezes 24 kg per cycle, works across a -40°C to +85°C range, and lets you string heating and cooling phases together into one programmed cycle, for example slow cooking overnight then chilling straight after. It is the only single-phase model in the Genius range, which suits cafes, patisseries and restaurants that want the multifunction features at a smaller size than the 10 tray GL10 and 16 tray GL16.

Good to know before you buy:

• Power: runs on single-phase 220–240V power and draws 2.1 kW (about 8 A). Make sure the outlet you plan to use is suitable for that load.
• Accessories: internal runners are included. Stainless steel grids (GN 1/1 and 600 x 400) and a castor kit (Genius RT) are sold separately. Ask us for prices.
• Airflow: keep the front grille and the area around the unit clear so the refrigeration system can breathe.
• Access: 790 mm wide and 926 mm deep, delivered by tailgate truck to the front of your premises.

Common questions:

Can it cook as well as chill?
Yes. The Genius range covers low-temperature cooking, hot holding, regenerating and pasteurising as well as chilling and freezing, and you can combine those phases in one programmed cycle.

Will 600 x 400 bakery trays fit?
Yes. Polaris rates it for 5 x 1/1 GN or 600 x 400 trays.

Do you install it?
We supply the equipment only. If you need a new circuit or outlet, that must be done by a licensed electrician in your area.
