The Polaris Genius GL16 is a 16 tray multifunction blast chiller that does far more than chill. As well as blast chilling 85kg and shock freezing 70kg per cycle, it can thaw, prove, hold and cook at low temperature, and combine these cycles into one program, across a -40°C to +85°C range.
