Types of bakery and pizza prep equipment
- Dough sheeters roll pastry, pizza bases and laminated doughs between adjustable rollers to an even thickness. A reversible conveyor passes the dough back and forth for lamination.
- Dough rounders shape divided dough pieces into smooth, even balls for pizza bases, rolls and buns, much faster than rounding by hand.
- Bread slicers cut whole loaves into even slices. Slice thickness is set by the blade set fitted.
- Pizza dividers cut a whole pizza into equal slices in one press for consistent portions.
- Pizza dough rollers and presses shape dough balls into round, even pizza bases in seconds, either between rollers or between heated plates.
- Dough dividers cut a large batch of dough into equal portions automatically, ready for rounding and proving.
Choosing prep equipment
- Dough range: check a rounder's weight range, and a sheeter's roller width and gap, against the products you make.
- Bench space: fold-up sheeter tables and mobile machines on castors save space between shifts.
- Wet doughs: high-hydration dough sticks more easily, so look for non-stick augers and rollers if you work with it.
- Safety: look for emergency stops and guards to support WHS compliance.
